Cherries were named after the Turkish crown of Cerasus and date back as far as 300 B.C. We can now purchase cherries off-season, canned or frozen, for recipes like cherry pie – my dad’s favorite.

CHERRY QUICK BREAD

Ingredients:

3/4 cup granulated sugar

1/2 cup milk

1/2 cup oil

1 large egg, room temperature, slightly beaten

2 cups all purpose flour

2 tsp. baking powder

1/4 tsp. salt

2 (10 oz.) jars of maraschino cherries, drained and chopped, but save the juice

* sliced almonds for garnish (optional)

Glaze:

2 cups confectioner’s sugar

2 Tbs. melted butter

1/3 cup maraschino cherry juice

1/12 tsp. almond extract

DIRECTIONS:

  1. Preheat oven to 350 degrees. Spray 9×5-inch loaf pan.
  2. Sift all dry ingredients for bread together and set aside.
  3. Mix together egg, milk and oil. Slowly add dry ingredients and mix.
  4. Fold in chopped cherries.
  5. Bake for 55 minutes or until toothpick comes out clean in center.
  6. Remove from oven and cool completely on wire rack.

Glaze:

Mix all ingredients together. Drizzle slowly over top of bread.

Garnish with sliced almonds if desired.
