A scone is a Scottish quick bread said to have taken its name from the Stone of Destiny, which was the place where Scottish kings were crowned.

The original triangle shaped scone was made with nuts and were griddle-bakes. Today, scones are made with flour, baked in the oven and are in various flavors.

ORANGE SCONES

Ingredients:

3 1/2 cups flour

4 tsp. baking powder

1 tsp. salt

1/3 cup sugar

1/2 tsp. ground cloves

1 1/2 sticks chilled butter

1 1/4 cup heavy cream

1 orange, zested

2 Tbs. milk

Orange marmalade

INSTRUCTIONS:

  1. Preheat oven to 350 degrees.
  2. Using a shredder or grater, shred the cold butter. Add flour, salt, ground cloves, sugar and baking powder, cutting in with two knives or a fork until crumbly.
  3. Add heavy cream and zest of one orange. Do not over mix.
  4. Dust table top with some flour. With hands, form dough into 1 1/2-inch thick circle shape. Gently form dough into disc shape and cut into 8 pieces, like you would cut a pie.
  5. Lightly spray a cookie sheet. Place 8 scones onto sheet.
  6. Brush top of each scone with milk to brown them.
  7. Bake for 25-30 minutes or until golden brown.
  8. While baking, heat 4 Tbs. marmalade in microwave for 30 seconds.
  9. Remove from oven and immediately brush tops of each scone with warm marmalade using a pasty brush. Cool completely.
