Scones are a delicious way to start the morning. The “biscuit-like” texture is not too sweet and can be flavored with many of your favorites. This recipe is simple, but remember not to overwork the dough to keep it light and airy.

PEANUT BUTTER SCONES with CHOCOLATE CHIPS

 

Ingredients:

2 cups flour

1/2 cup sugar

1 Tbs. baking powder

1/2 tsp. salt

1/2 cup cold butter

1/3 cup creamy peanut butter

1 egg

1/4 cup sour cream

2 Tbs. milk

1 tsp. pure vanilla

3/4 cup mini chocolate chips

 

Glaze ingredients:

1/2 cup confectioner’s sugar

2 Tbs. peanut butter

3–4 tsp. milk

 

INSTRUCTIONS:

  1. Preheat oven to 400 degrees.
  2. Whisk together the flour, sugar, baking powder and salt in a large mixing bowl. Cut in the butter and peanut butter. In a small bowl, whisk together the egg, sour cream, milk and vanilla. Add to the dry ingredients with the chocolate chips and stir gently until just combined. Pat the dough together in the bowl and dump onto the floured surface.
  3. Pat the dough into an 8-inch circle. Cut into 8 wedges (cut like you would a pie). Place the wedges 1-inch apart on a silpat or lightly greased cookie sheet. Bake in oven for about 12 minutes or until golden brown.
  4. For the glaze: Whisk together ingredients and add enough milk to make a glaze. Glaze the warm scones.
