Zucchini is a popular summer squash. Common market length is 4 to 8 inches long. However, some homegrown zucchini can grow 2 feet long. I always select smaller zucchini that are tender and have thinner skin.

There are many different methods used to prepare zucchini that may include steaming, frying, grilling, deep-frying and baking.

ZUCCHINI FRITTERS

Ingredients:

1 (6 oz.) container 2% Greek yogurt

2 tsp. lime juice

1 tsp. lime zest

1 1/4 tsp. salt

1 1/2 lbs. zucchini, shredded

1/2 cup sliced scallions

1/2 cup cilantro, chopped, plus more for garnish

1 egg yolk, beaten

1/3 cup all purpose flour

1/2 tsp. pepper

1/4 cup canola oil

INSTRUCTIONS:

1. Preheat oven to 200 degrees. In a small bowl, mix yogurt, lime juice, lime zest and 1/4 tsp. salt until smooth.

2. Squeeze shredded zucchini in a clean dishtowel until most of the moisture is absorbed. In a medium bowl, combine zucchini, scallions, 1/2 cup cilantro, egg yolk flour, pepper and remaining salt.

3. Heat 2 Tbs. of the oil over medium heat in a large saucepan. When simmering, add zucchini mixture in four one-quarter cup portions. Gently flatten fritters with a spatula until they are 3 inches in diameter. Cook fritters until browned, about 3 minutes on each side. Transfer fritters onto a baking sheet and place in oven to keep warm. Continue cooking fritters, adding 1 Tbs. oil each time. Serve with lime yogurt and garnish with cilantro.

Makes 12 fritters.
