Spinach salad with a warm vinaigrette is a classic way to enjoy a salad for dinner this summer. Another addition to this salad may include sliced fresh mushrooms. The spinach may wilt a bit with the addition of the warm dressing.

SPINACH SALAD WITH WARM DRESSING

For Dressing:

3/4 cup sugar

1/2 cup red wine vinegar

1 raw egg

Dash of salt

1 tsp. Dijon mustard

Whisk all ingredients together well or mix together in food processor.

Place in small saucepan and while continuing to whisk, bring to boil. Boil for 1 minute. Set aside.

For Salad:

5 cups baby spinach

6 slices of bacon, cooked crisp and coarsely crumbled

4 hard boiled eggs, sliced

Croutons (I make them homemade out of homemade bread or bread from bakery.)

Sea salt and fresh ground pepper

Place spinach in large bowl, lightly salting and adding pepper, then toss.

Top with bacon crumbles and pour desired amount of warm dressing on salad, tossing as you pour.

Add sliced egg and croutons on top of salad and serve immediately.
