Panko crumbs are Japanese breadcrumbs that are crunchy and give a crisp texture to foods. With green tomatoes on the vine this time of year, this is a great way to use a few of them for a grilled sandwich.

GREEN TOMATO GRILLED CHEESE
Ingredients:
2 medium green tomatoes
4-6 slices of Gouda cheese
1 egg, slightly beaten
1/2 tsp. sea salt
1/2 tsp. fresh ground pepper
1 cup flour
1 cup Panko crumbs
Butter
Rosemary bread (or a good Italian sprinkled with a little rosemary)
INSTRUCTIONS:
Preheat oven to 400 degrees. Cover cookie sheet with foil and spray with cooking spray.
1. Slice green tomatoes and set aside. (I use a slicer so they are thin.)
2. In a small bowl, whisk egg.
3. In another small bowl, add flour, salt and pepper blending well.
4. In third small bowl, add Panko crumbs.
5. Take one tomato slice at a time and coat with flour, egg and then Panko crumbs.
6. Place each coated tomato slice on prepared baking sheet.
7. Bake for 8-10 minutes on each side. Remove from pan and gently lift from foil just to loosen each piece.
8. Heat non-stick skillet on medium heat. Butter two slices of bread. Placing first slice in pan with buttered side down, then lay a slice of cheese on bread.
9. Add a few tomato slices on top of cheese and then top with another slice of cheese.
10. Top with other piece of buttered bread with buttered side up.
11. Grill one side until browned and then gently flip and grill other side.
12. Cover if needed until cheese is melted.
