Balsamic vinegar is Italian vinegar made from the juice of Trebbiano grapes. It is aged in casks of different woods, which produce sweetness.
Tomatoes with balsamic vinegar make a great compliment to this chicken and cheese combination.

CAPRESE CHICKEN
Ingredients:
1 Tbs. extra-virgin olive oil
1 lb. boneless chicken breasts
Kosher salt
Fresh ground black pepper
1/4 cup balsamic vinegar
2 garlic cloves, minced
1 pint grape tomatoes, halved
2 Tbs. fresh basil, chopped
4 slices mozzarella (medium thick)
DIRECTIONS:
1. In a large skillet, heat oil on medium high heat.
2. Season chicken with salt and pepper and cook until done, about 3-5 minutes on each side.
3. Add balsamic vinegar to skillet to deglaze pan. Add garlic and stir until fragrant, about 1 minute. Add tomatoes and season with salt. Let simmer until semisoft, 5 minutes. Divide tomato mixture in half, leaving half on top of chicken and reserving half.
4. Place 1 slice of mozzarella cheese on top. When partially melted, add remaining tomato mixture on top of melted cheese. Serve warm and enjoy.
