I love both cheesecake and chocolate chip cookies. This recipe will give you a taste of both in one delicious cookie-bar.

CHEESECAKE CHOCOLATE CHIP BARS

Cookie Layer Ingredients:

1/2 cup butter, softened

1 cup brown sugar

3 Tbs. white sugar

1 egg

1 tsp. vanilla

1 3/4 cups flour

1/2 tsp. salt

1/2 tsp. baking powder

1/2 tsp. baking soda

1 cup semi-sweet or dark chocolate chips

Cheesecake Layer Ingredients:

1 (8 oz.) package of cream cheese, room temperature

1/4 cup sugar

1 egg

1/2 tsp. vanilla

Cookie Layer Instructions:

1. Preheat oven to 350 degrees.

2. Cream butter and both sugars. Add the vanilla and egg, mixing until combined.

3. Sift dry ingredients together and add to butter mixture and mix until incorporated.

4. Stir in chocolate chips.

Cheesecake Layer Instructions:

1. Combine cream cheese and sugar. Beat until light and fluffy.

2. Add vanilla and egg and mix until combined.

ASSEMBLY:

Press half the cookie batter into an 8×8-inch square baking dish. Pour the cheesecake batter evenly over top of first cookie layer. With remaining cookie batter, scoop and press gently on top of cheesecake layer.

Bake 35-40 minutes. Cool completely before cutting into squares. Store in refrigerator.
