Many times it is more about the process or procedure than the actual recipe of ingredients. There are always different methods to achieve the same goal.

The way I make a recipe is not the only way, but just a suggested way in terms of making it easier, healthier or tastier. Baking times and temperatures will always vary according to one’s oven.

BAKED SPAGHETTI CASSEROLE

Ingredients:

16 oz. package spaghetti

1 pound ground Italian sausage

1 medium onion, chopped fine

26 oz. jar meatless spaghetti sauce

1/2 tsp. seasoned salt

2 eggs room temperature

1/3 cup grated Parmesan cheese

3 Tbs. butter

2 cups small curd cottage cheese (I use dry curd)

4 cups shredded mozzarella cheese

Parsley flakes for garnish

INSTRUCTIONS:

  1. Preheat oven to 350 degrees.
  2. Cook pasta el dente, drain and then lightly spray with cooking spray to prevent sticking together.
  3. Crumble Italian sausage on a baking sheet lined with parchment paper. Bake in preheated oven for about 25-30 minutes, or until browned. Remove from oven and drain fat from sausage by placing on several pieces of paper towel. Set meat aside.
  4. In medium skillet, melt 4 Tbs. butter. Cook onion until tender, only about 1-2 minutes. Set aside. Stir in seasoned salt. Drain any excess butter from onions by patting with paper towel.
  5. Add spaghetti sauce to onions and heat thoroughly.
  6. Whisk eggs together, and then stir in cottage cheese.
  7. Spread some spaghetti sauce on bottom of 9×13-inch baking dish. Add one layer of cooked spaghetti followed by cottage cheese mixture. Sprinkle Parmesan cheese followed by mozzarella cheese. Pour some more sauce on top of this and repeat process. Place parsley flakes on last layer of mozzarella for garnish.
  8. Cover with vented foil and bake in preheated oven for 35-40 minutes or until heated through. Remove foil and bake another 5 minutes. Remove from oven and let stand for 5 minutes before serving. Enjoy.
