When the colonists landed in North America, they found the Indians growing and using pumpkins. The new Americans embraced this large fruit and subsequently, pumpkin pie has become a national Thanksgiving tradition.

The pumpkin is a member of the gourd family and is a good source of vitamin A. With so many recipes, both sweet and savory, this coffee cake is both easy and delicious.

PUMPKIN SPICE SWIRL CAKE

Cake Ingredients:

1/3 cup vegetable oil

2 large eggs

1 cup granulated sugar

1 cup pumpkin puree (canned pumpkin)

1 tsp. pumpkin pie spice (or 1/2 tsp. cinnamon and 1/4 tsp. each of ground ginger and nutmeg)

1 tsp. salt

1 tsp. baking powder

1 1/2 cups all purpose flour

Cake Topping Ingredients:

2/3 cup granulated sugar

Pinch of salt

3/4 cup all purpose flour

1 tsp. ground cinnamon

1/4 chopped pecans

4 Tbs. melted butter

Cake Filling Ingredients:

1/3 cup brown sugar

1 tsp. ground cinnamon

1 tsp. unsweetened cocoa powder

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Lightly grease 8-inch square pan.
  2. Make cake topping first by whisking together sugar, salt, flour, spice and nuts. Add the melted butter, stirring just until well combined. Set the topping aside.
  3. Make the filling next by mixing together the brown sugar, spice and cocoa powder. (Note: the cocoa powder is being used for color, not flavor.) Set aside.
  4. To make the cake, beat together the oil, eggs, sugar, pumpkin, spices, salt and baking powder until smooth.
  5. Add the flour, stirring just until smooth.
  6. Pour and spread half the batter into prepared pan, spreading evenly.
  7. Sprinkle the filling over batter in the pan.
  8. Spread remaining batter on top of filling. Use a table knife to gently swirl the filling into the batter. (Similar to making a marble cake)
  9. Sprinkle the topping onto batter.
  10. Bake until cake is light brown on top and toothpick inserted in center comes out clean, about 50 minutes.
  11. Remove the cake from oven and allow to cool for 20 minutes before cutting. You can serve this cake right from the pan.
