Banana bushes mature in about 15 months and produce one 50-pound bunch of bananas apiece. Ripe bananas can be stored in the refrigerator for several days. The peel will turn brown, but the flesh will remain unchanged. Once a peeled banana is exposed to air, it will turn brown. To avoid this, brush with lemon juice.
Bananas are high in carbohydrates and low in protein and fats. They are also high in potassium and vitamin C.

EASY BANANA QUICK BREAD
Ingredients:
1 yellow cake mix
3 large eggs, room temperature and slightly beaten
1/2 cup vegetable oil
4 frozen ripened bananas, slightly thawed
1/2 cup chopped walnuts
Instructions:
1. Preheat oven to 350 degrees. Spray 2 loaf pans with cooking spray and dust lightly with flour.
2. Mix first three ingredients together well. Then add bananas one at a time. Stir in chopped walnuts.
3. Fill loaf pans (about half full). Bake in preheated oven for about 45 minutes or until toothpick inserted in center comes out clean.
4. Remove from oven and run case knife around edges of pan. Leave in pans for 10 minutes. Turn out onto wire rack to finish cooling.
