Growing up in a household with wonderful smells of food and bakery is an important part of my childhood. Christmastime especially holds fond memories of my mom and I baking the Christmas cookies. One such cookie that was a favorite of my mom’s was a cookie called a Cherry Delight.

CHERRY DELIGHT COOKIES

Ingredients:

1 cup butter (2 sticks) softened

1 cup granulated sugar

1/2 cup light corn syrup

2 eggs, separated

1/2 tsp. vanilla

2 1/2 cups all purpose flour

2 cups finely chopped pecans or walnuts

48 candied cherry halves

Cooking spray

INSTRUCTIONS:

  1. Beat butter and sugar in mixing bowl on medium until light and fluffy.
  2. Add corn syrup egg yolk and vanilla. Beat well.
  3. Gradually add flour, beating on low speed after each addition until well blended.
  4. Cover and refrigerate for 1 hour.
  5. Preheat oven to 325 degrees. Spray baking sheets with cooking spray. Beat egg whites in a small bowl until fluffy.
  6. Roll teaspoons full of dough into balls and dip each ball in egg whites, then roll in chopped nuts until evenly coated. Place on cookie sheet 1 1/2 inches apart and press cherry half on top of each cookie.
  7. Bake 25 minutes or until lightly browned.  Cool completely on wire rack.
