The artichoke is an edible thistle that dates back centuries. It was thought to be a food of the nobility by the ancient Romans.

Artichokes are the flower bud of a large thistle. To eat cooked artichoke leaves, cut off leaves one by one and draw the base of leaf through one’s teeth to remove the soft portion, discarding the leaf.

Artichokes contain small amounts of vitamin A and no fat. One can use artichoke hearts from a jar for recipes.

ARTICHOKE AND RED BELL PEPPER PIZZA

Ingredients:

Cooking spray

1 (10 oz.) refrigerated pizza crust

1 Tbs. olive oil

1 cup of red bell pepper strips

1 tsp. dried basil

1 tsp. dried oregano

5 garlic cloves, minced

1 (14 oz.) container of artichoke hearts, drained and coarsely chopped

1 (2.5 oz.) jar sliced mushrooms, drained

1 1/2 cups shredded mozzarella cheese

Cracked black pepper

INSTRUCTIONS:

  1. Preheat oven to 425 degrees.
  2. Spay 14×10-inch rectangle baking pan with cooking spray.
  3. Unroll pizza dough onto baking pan. Pat dough into a rectangle. Bake for 6 minutes and set aside.
  4. Heat oil in a large non-stick skillet over medium high heat. Add bell pepper and next three ingredients. Saute 5 minutes. Remove from heat and stir in artichokes and mushrooms.
  5. Sprinkle half the cheese over prepared pizza crust, leaving 1/2-inch border. Spread vegetable mixture evenly over cheese and top with remaining cheese and cracked pepper.
  6. Bake for 10 minutes or until crust browned. Enjoy.
