Spinach originated in the Middle East and was grown in Spain in the 8th century. The Spanish then brought it to the United States.
This “power-packed vegetable” comes from the fact that it is packed with iron, as well as vitamins A and C. Spinach is now added to a salad, pasta, soups and many other dishes as added color, taste and vitamins.

EGG WHITE-SPINACH MUFFINS
Ingredients:
1 Roma tomato, cut into small cubes
2 cups baby spinach (the spinach will cook down in each cup)
2 cups egg whites
1/2 tsp. sea salt
1/4 tsp. pepper
INSTRUCTIONS:
- Preheat oven to 350 degrees.
- Lightly spray a muffin tin with oil.
- Equally divide the spinach, tomatoes and egg whites into muffin cups.
- Season with salt and pepper.
- Bake for 15 minutes or until egg whites have set.
- Serve hot with wheat toast.
