Bacon is the side of a pig that has been cured and smoked, which is done to preserve it. Fat gives bacon its sweet flavor and tender crispness.

Sliced bacon has been trimmed off the rind, sliced and packaged. It is how most purchase their bacon, but some still prefer slab bacon. However one prefers it, bacon can be such a flavor enhancer to one’s dish.

This dip recipe is a combination of the great flavor of bacon and cheddar cheese. The dip can be served as an appetizer or even on grilled burgers.

SWEET BACON CHEDDAR DIP

(Yield: 4 cups)

Ingredients:

3/4 cup yellow sweet mustard

1 cup mayonnaise (not salad dressing)

2 cups shredded cheddar cheese

12 oz. bacon, cooked and crumbled*

Chopped green onion for garnish

* I bake my bacon in the oven on 350 degrees for about 15-18 minutes, and then pat with paper towel to drain some fat.

INSTRUCTIONS:

Combine all ingredients in a medium bowl and garnish with chopped green onion.

Serve with seasoned crackers or tortilla chips.
