While visiting a my dear friend in St. Louis, she shared a wonderful recipe with me for a broccoli casserole.

LUCY’S BROCCOLI CASSEROLE

Instructions:

1 box frozen chopped broccoli

1 stick butter

not margarine

1 medium finely chopped onion

2 cups shredded cheddar cheese

2 cups instant rice (uncooked)

2 cans cream of cream of mushroom soup

1 can water

1 can milk

Salt, pepper and garlic powder to taste

Directions:

1. Preheat oven to 350 degrees.

2. Use 9×13-inch pan and place 1 stick of butter, broccoli and onion in dish. Place in oven until heated through and broccoli and onion are tender.

3. Remove from oven, add 2 cups instant rice, 2 cans cream of mushroom soup, 1 can water and 1 can milk. Season to taste.

4. Bake 30 minutes, stirring occasionally.

5. Remove, top with 2 cups shredded cheddar. Allow to melt by covering with lid for approximately 2 minutes.

Serve immediately.
