Marsala is one of Italy’s most famous wines. It has a rich, dark, smoky flavor that comes from the oxidation during aging.

Marsala is imported from Sicily and made from local grapes. One of many popular dishes made with this wine is chicken marsala and is prepared many different ways.

The simplicity of this recipe has made it my favorite. The flavors are delicious in this dish, so please email me at brencook4u@aol.com with your comments.

CHICKEN MARSALA

Chicken Coating Ingredients:

1/2 cup pastry flour

1/2 cup crushed saltine crackers

1 tsp. seasoned salt

1/2 tsp. chicken seasoning

1/2 tsp. paprika

1/2 tsp. garlic salt

1/2 tsp. onion salt

1/2 tsp. black pepper

Mix all ingredients together well.

8 oz. package of sliced fresh mushrooms (baby bellas are best)

2 Tbs. melted butter

6 boneless, skinless chicken breasts

1/3 cup butter

1 cup Marsala wine

1 cup chicken broth

1/2 tsp. salt

1/8 tsp. fresh ground black pepper

3/4 cup shredded mozzarella cheese

1/2 cup shredded parmesan cheese

2 green onions, chopped

INSTRUCTIONS:

1. Cook mushrooms in 2 Tbs. melted butter in large skillet over medium-high heat stirring constantly for 3-4 minutes, just until tender. Remove from heat; set aside.

2. Cut each chicken breast in half lengthwise and place in half gallon zip-close bags. With meat-mallet, pound each chicken breast to 1/8 inch thick.

3. Dredge chicken pieces in coating ingredients. Melt 3 Tbs. butter in large skillet over medium heat. Cook chicken in batches 3-4 minutes on each side until golden. Place chicken in a lightly greased 9×13-inch baking dish. Repeat process with remaining chicken and butter, reserving drippings in your skillet. Sprinkle mushrooms evenly over chicken.

4. Add wine and broth to skillet. Bring to boil; reduce heat and simmer uncovered for 10 minutes stirring occasionally. Stir in salt and pepper. Pour sauce over chicken. Combine cheeses and green onions; sprinkle over chicken. Bake uncovered at 450 degrees for 12-14 minutes or until cheese melts. Serve immediately.
