There are so many wonderful treats I can remember as a child that have somehow got lost in the shuffle of being an adult. For some reason, these simple, great recipes have been replaced by complex, time-consuming ones. Below is one such recipe.

This no-bake cookie will be an easy one for the kids to make this summer – with supervision. Please email me at brencook4u@aol.com if you know of other recipes like this.

 

CORN FLAKE CLUSTERS

Ingredients:

1 cup granulated sugar

1 cup light corn syrup

1 cup creamy peanut butter

1/2 tsp. pure vanilla (1 tsp. vanilla extract)

6 cups corn flakes

INSTRUCTIONS:

  1. Prepare wax paper.
  2. In large saucepan, combine sugar, corn syrup and peanut butter. Stirring constantly, cook over medium high heat until center starts to boil.
  3. As soon as the sugar mixture comes to a boil, remove from heat and stir in the vanilla and corn flakes. Mix until cornflakes are evenly coated.
  4. Immediately drop onto wax paper with an ice cream scoop. Allow to cool for 30-40 minutes. Enjoy.
