Gnocchi is Italian for “dumplings.” Gnocchi can be made from potatoes, flour or rice. Eggs and cheese are sometimes added to the dough. Finely chopped spinach is my favorite addition.

Gnocchi are commonly made into little balls, cooked in boiling water and served with a savory sauce. Conveniently, gnocchi can be purchased in most grocery stores in the freezer section.

CHICKEN AND SPINACH GNOCCHI

Ingredients:

1 Tbs. olive oil

2 cups sliced mushrooms

1 small yellow onion

1 1/2 tsp. minced garlic

4 Tbs. butter

1/4 cup all purpose flour

2 tsp. chicken seasoning

1/4 tsp. ground cayenne pepper

1 1/4 cups chicken broth

2 cups whole milk

1 package (16 oz.) gnocchi

2 cups rotisserie chicken

2 cups fresh spinach

1/2 cup parmesan cheese

Fresh parsley

1 tsp. salt

1/2 tsp. pepper

INSTRUCTIONS:

  1. Place oven rack in upper third of oven and preheat to 425 degrees.
  2. In large oven-safe skillet, over medium-high heat, add olive oil.
  3. Add mushrooms and chopped onion, stirring until onion is transparent about 5 minutes. Add garlic and stir for another 30 seconds. Remove to a small bowl and quickly wipe out skillet.
  4. Place butter into skillet and melt. Gradually whisk in flour, chicken seasoning, salt and pepper until smooth and cook for about 3 minutes, whisking while you cook.
  5. Gradually whisk in the milk and chicken broth until mixture is smooth; allow mixture to thicken for about 5 minutes while whisking.
  6. Remove skin and bones from chicken and cut into small pieces. Add chicken, gnocchi (uncooked), mushrooms, onions and spinach. Stir until all is coated.
  7. Top with Parmesan cheese and place in oven. Bake for 20 minutes, and then place on broil for 2 minutes to lightly brown.
  8. Remove from oven, adding additional salt and pepper if needed. Garnish with chopped fresh parsley. Serve immediately. Enjoy.
