Malt is barley that has been kiln-dried and ground into a slightly sweet powder that then can have many uses. Malted milk powder and malt vinegar are probably the most popular uses for this product.
During the maple season, take advantage of making homemade pancakes and waffles. My favorite kind of waffle is malt waffles.
This is a simple, but tasty way to make great waffles and I hope you enjoy. Email me at brencook4u@aol.com and let me know how you liked them.
Ingredients:
2 cups flour
1 Tbs. baking powder
? tsp. salt
1 Tbs. sugar
3 Tbs. vanilla malted milk powder
1 tsp. vanilla
4 eggs, separated
? cup vegetable oil
1? cups milk
Instructions:
Preheat greased Belgian waffle maker.
Combine flour, baking powder, salt, sugar and malted milk powder.
In separate bowl, beat egg yolks until thick and lemon colored, and then add to dry ingredients.
Add vegetable oil, milk and vanilla. Stir until smooth, but do not over-mix.
Beat egg whites until stiff peaks form (not dry).
Fold egg whites gently into batter. This will make the texture of your waffles light.
Bake waffles until golden.
Serve with Geauga County maple syrup and enjoy.
